  • Sous vide — French for "under vacuum" — is a modern cooking technique in which food is vacuum-sealed and slow-cooked submerged in water at precise temperature until cooked to perfection.

  • Using special plastic bags or a glass jar as protection, most foods can be sous vide. All proteins, poultry, eggs, nuts, potatoes, desserts, and much more.

  • It's important to use the right bags when cooking via sous vide! 

    We recommend using either High-density polyethylene (HDPE), low-density polyethylene (LDPE, or polypropylene bags as these are the safest to use. 

    They are resistant to the sub-boiling temperatures used in sous vide cooking. Sous vide is actually considered one of the safest methods of cooking by chefs worldwide thanks to its precision and control. 

    You'll still want to take regular food safety practices seriously.

  • If cooking below 130°F you should pre-sear your meats so that surface area bacteria is killed. 

    Figo helps rapidly cool foods down to 39°F after cooking (in a dry environment so you don't get water-logged food!) if you're running late, which exceeds FDA guidelines.
